our Story
eating is an agricultural act.
We’re Jess and Terrill Trask and we would love to welcome you to JT’s Steakhouse. A little bit about us: Jess manages her family’s ranch, Perigo Hay & Cattle, where she raises black Angus cows. In 2020, Jess started selling beef from her ranch directly-to-consumers. Terrill has always had a dream to open his own restaurant and the idea of showcasing Jess’ beef in a steakhouse was a natural collaboration.
Because we are using beef from our ranch, we utilize the whole animal, which is why you’ll see a rotating menu and some beef dishes beyond just steaks.
All “Perigo Beef” is born, raised, and finished on our ranch, right here in White Pine County. Our beef is certified Angus, verified natural, and BeefCARE certified. CARE certification ensures that ranchers, like Jess, have a focus on environmental stewardship, animal husbandry, and community involvement. Our beef animals are raised on pasture then we finish them with homegrown alfalfa and corn.
Our vision is to give Ely a restaurant that they’re proud of and reflects the wonderful community we have.
If you come to the restaurant and love the beef, you can order some online to have shipped to your door.
